At the turn of the century "chili queens" vended chili from carts in San Antonio while hot dogs were being vended from carts at Coney Island. It was just a matter of time before east met west and the all American chili dog or chili cheese dog was born. While chili dogs are popular across the nation, each region lays claim to different ingredients and toppings for their chili dogs. A chili dog from New York will be different from one in Arizona. New York - Chili (no beans), onions an mustard
Maine - Red hots, a bright red dog grilled and served on a buttered roll
Rhode Island - Chili (no Beans), mustard, chopped onion and celery salt. Hot dogs are sometimes made with veal.
New Jersey - Deep fried served on an Italian roll with yellow relish, onions, peppers and diced stewed potatoes.
Louisiana - Sweet pickle relish, green chilies, hot sauce and mustard
Texas - Pickled slaw and barbeque sauce
Chicago - Poppy seed bun, yellow mustard, tomato, pickle relish, pickle spear, pickled peppers and celery salt
Hawaii - Puka dog has a bun grilled on the inside and served with mango relish or guava mustard or your choice of other exotic condiments
Boston - Fenway Franks are served on a buttered bun with mustard, chopped onion and green pickle relish
Alabama - Sauerkraut and a red onion sauce were the secret of famous Pete's dogs in Birmingham.
Los Angeles - Bacon wrapped dogs served with mayo.
Kansas and Missouri - Hot dogs are served on sesame seed buns with sauerkraut and Swiss cheese.

Arizona chili dogs are wrapped in bacon and then served in steamed buns with pinto beans, hot chili peppers and mustard. Arizona dogs may also include shredded cheese. Try an Arizona Chili Dog to stir things up.
Ingredients
- 8 hot dogs
- your choice
- 8 slices of bacon
- 8 bolillo rolls (use Portuguese rolls or any long soft fresh roll if you cannot find bolillo rolls.)
- pinto beans
- toppings: chopped onions shredded cheese and diced jalapenos or other piquant chili pepper.
- condiment: mustard mayonaisse guacamole or salsa verde
Instructions
- - wrap hot dogs in bacon
- - grill in frying pan or on outdoor grill until the bacon is crisp
- - steam buns over a small amount of water in a large pan...use a vegetable steamer to place buns in pan so the rolls do not get wet
- - heat pinto beans in small pan until warmed through
- - split bolillo rolls after they are steamed
- - place hot dogs in rolls, top with beans and your choice of cheese, peppers, onions and a favorite condiment.
Coney Island Hot Dogs - The Coney Island Sauce is Distinctive
Coney Island hot dogs are a natural casing dog that are served with a chili or sauce similar to chili that has no beans or tomatoes. Try this classic when you want to have a great hot dog for dinner.
Ingredients
- 8 hot dogs (natural casings)
- 1 lb. ground beef
- 1 small chopped onion
- 2 tbsps. yellow mustard
- 2 tbsps. cider vinegar
- 2 tbsps. sugar
- 1 tsp. Worcestershire sauce
- 1/4 tsp. celery seed
- 1/4 tsp. Tabasco Sauce
- 1/4 tsp.cinnammon
- 1 tsp. chili powder
- 2 tbsps.butter
- ketchup
- chopped onions
- yellow mustard
- shredded cheese
- 8 hot dog rolls
Instructions
- In a salted skillet, brown ground beef in butter with onion over medium heat, breaking up meat with a fork to crumble it fine. Drain off fat.
- Add all other ingredients. Mix well, then add ketchup to keep mixture loose. Simmer, partially covered, 1 hour, adding ketchup as needed.
- Boil hot dogs in water until heated through. heat hot dog rolls in oven until warm. Place hot dogs in rolls and top with the Coney Island sauce, chopped onions and yellow mustard. This is the traditional way to serve a Coney Island hot dog but I have seen them with cheese. With cheese it is called a "loaded" dog. Top yours with shredded cheddar if you would like to try a Coney island dog "loaded" with cheese.
Chicago Style Hot Dog - No Cheese No Chili
I had to throw in the Chicago dog even though there is no cheese or chili. A Chicago hot dog is a steamed dog on a poppy seed bun with yellow mustard, chopped onions, bright green pickle relish, a dill pickle spear, pickled peppers, tomato wedges and celery salt or seed. This is a hot dog that is called being "dragged through the garden."
Ingredients
- 8 hot dogs
- 8 poppy seed buns
- 8 pickle spears
- green pickle relish
- yellow mustard
- chopped onions
- pickled peppers
- sliced tomato
- celery salt
Instructions
- Boil hot dogs until heated through. Buns can be heated in the oven while the hot dogs cook. Sprinkle celery salt on hot dogs and place in bun. Line hot dog with green pickle relish and sliced tomatoes and yellow mustard. Top the hot dog with pickle spear and pickled peppers. Serve.
